OUR STORY

During the early stages of COVID, there were food shortages in Austin, TX. My brother and I went to the Farmers Market in search of more beef. There, we met a Wagyu rancher who sold directly to consumers.

We fell in love with Wagyu beef. Despite the quality, our taste buds were left feeling that there was a particular flavor missing. I bought the only book I could find on the origins of Wagyu in Japan. Through this book, I learned that the Japanese traditionally cooked their beef over charcoal and only seasoned it with high quality salt flakes. While this sounded simple, I didn’t own a grill. So, I set out to recreate the genuine flavors of a charcoal grill, and realized that using activated charcoal as a dry rub would mimic that taste; all from within the comfort of my apartment. Adding in high quality salt flakes was the finishing touch.

Months later, my brother ended up working at the Wagyu Ranch as a cowboy and butcher. He told me that the #1 question customers asked was, "How should I cook Wagyu?" So, I sought to answer that question for Wagyu enthusiasts in the USA, and Sumi Shio was born.

In Japanese, Wagyu means "Black Cow" and Sumi Shio translates to "Charcoal Salt."

Here we are in 2021, full circle, with Sumi Shio. The best black salt for the best black (& brown & red) cows!

"TOP NOTCH WAGYU DRY RUB"
I have been looking for a dry rub specifically for wagyu for a long time, and have not found anything on the market until I happened upon Sumi Shio. The tantalizing salt flakes and activated charcoal make the perfect synergy of flavor that accents all of the finest notes of the wagyu. I also really like that this rub only contains two natural ingredients and no additives. I will definitely be buying more when I run out.
